Dehydrating food has become another fun method of food preservation for me. I have always been a fairly heavy food stocker-prepper-hoarder, where I have even gone as far as using bungy cords to hold food in the freezer of our side-by-side, when I ran out of room in the chest freezer.
Then I started using Mylar Bags to repackage any boxed, packaged and/or some powdered foods. As my freezers became overwhelmed, I began pressure canning meats and poultry to free up space in my freezers.
In a grid down situation, even though we have a generator, all I could think of was the amount of money that would be lost if the grid down situation lasted longer than our supply of fuel.
I began watching videos on dehydrating foods and there is pretty much nothing to it. You slice your food, lay it out on the trays, set the timer and see ya' later. It does take hours to dehydrate anything, but it's worth it because you can preserve so much more food and you can safely buy fruits and vegis in bulk and preserve it.
The picture you see above is from my own dehydrator - pineappleas, bananas and strawberries. I have also dehydrated apples, bell peppers, green onions, kale, mustard greens and turnip greens. I use a spare coffee grinder to grind the greens into a powder to use in other recipes. I have also made a fruit leather (fruit roll-up) out of the cranberry pulp from when I canned cranberry juice. I definitely need more practice making fruit leather.
Next, I will move on to dehydrating meat and making my own jerky. There is nothing more comforting than having a well-stocked and prepped working pantry.
The pics you see below are dehydrators that I recommend as the Magic Mill and Excalibur are both made in the USA. I bought the Magic Mill 10-Tray and I do know several people who have the Magic Mill 5-Tray and Love it too.
I do recommend using a chain mail glove (see pic below) to slice your fruits and vegis when using a mandolin. Below is the one I use.
