Below are my favorite bread recipes. I don't feel like I need to re-invent the wheel or make my own video as the following are pretty darn fantastic teachers. I have tried all of these recipes and they are all easy and kind of no-brainers.
In a grid down situation or bread/flour shortage, I not only intend to carry-on without flinching, I want to be able to make these recipes without the need for electric. I'm lucky as our stove is gas, so while the oven will not work in a grid down (electric down) situation, at least the gas stovetop will work.
Also, I can use my Cast Iron Dutch Oven on the tripod with charcoals outside to make my bread loaves or dinner rolls. I'm ready. How about you? I've been practicing all types of scenarios so I will not miss a beat.
This first recipe is my favorite because it is a quick five (5) minute no-knead dough AND it has so many great ideas to use the dough and it can be stored for up to two (2) weeks in the refrigerator.
Mary has some really great videos of all different sorts. Her no-knead bread was so easy that the first time I made it, it can out to perfection. I made two (2) loaves and then went to the King Arthur Bread website to find out how to freeze bread. So I sliced up the bread and packaged it the way they instructed. Super easy dinner rolls. Becky has a lot of really great videos. Her dinner rolls were just the ones I was looking for - light, fluffy and chewy. YUM!
I like this tortilla recipe the best. I cannot believe how she can make these tortillas and not get one bit of flour or butter on her sleeves. UNREAL!
