Tarragon is a perennial herb that has aromatic leaves with a distinct anise (licorice like) flavor. It is a bushy plant with slender branching stems and narrow, glossy green leaves. When the leaves are crushed, there is a pleasant fragrance released.
French tarragon is known for its flavor, while Russian tarragon is more robust and less flavorful.
Tarragon supports digestion, assists with blood sugar regulation, contributes to cardiovascular health and is believed to have anti-inflammatory and antimicrobial properties.
It has been used to promote sleep, although too much tarragon can result in drowsiness. It also been used for menstrual cycles to relieve premenstrual symptoms.
Overconsumption can also lead to sleepiness, numbness, or even hallucinations. Avoid while pregnant and nursing.

French cuisine, sauces and dressings, poultry and fish, eggs and dairy, soups and stews, vinegars and infusions, it is even used in simple syrups for cocktails
